Carlisle Bay is a luxury resort looking out over white sand, palm trees and turquoise water, with a backdrop of emerald green rainforest. Sophisticated and contemporary in style, this modern Caribbean classic on Antigua's south coast is instilled with genuine West Indian conviviality.
With a wonderful beach in a secluded bay, four outstanding restaurants, an exceptional spa and a philosophy founded on generous service, Carlisle Bay, a member of Leading Hotels of the World, is simply stunning. The resort features spacious suites all with cool, calm contemporary interiors, terrace or balcony and breathtaking ocean views.
Carlisle Bay is situated on the magnificent undeveloped south coast of Antigua. The hotel is thirty minutes drive from V. C. Bird International Airport (ANU) and the tiny, bustling capital of St John's.
Dining at Carlisle Bay is all about choosing the right restaurant to suit your mood, from a relaxed, foot-in-the-sand lunch delivered to your lounger in the Coconut Grove, to a romantic dinner for two at East, which is considered one of the island's finest Asian restaurants. The culinary options await at four distinctive venues serving locally sourced ingredients which are always fresh and delicious.
Indigo on the beach is the relaxed heart of Carlisle Bay. Sea breezes fill the open-sided room and terrace. Tables are spread out over a rustic wooden floor on which bare feet are welcome at any time of day. Dishes tend toward the fresh and healthy - grilled seafood, crisp salads, home-made breads and pastas. A Caribbean beach barbecue is served here once a week.
East is one of Antigua's best restaurants - open for dinner only, attracting guests from all over the island, including those on honeymoon in Antigua. The fuchsia and dark wood interior has a sexy feel. The restaurant is entered via tall Indonesian carved doors. Japanese, Thai, and Indonesian dishes all appear on the menu, with sushi, sashimi and Balinese specialties among the main draws. Reservations essential.
Ottimo! is an Italian casual venue beside the pool, open for lunch and dinner with tables spread out in the shade. From the authentic wood-burning pizza oven emerges classic dishes using the freshest of Italian ingredients. Salads, antipasti and homemade gelato make this a destination at the midday sunshine hour – and with a Little Ottimo! menu for children, is enduringly popular with families.
The Jetty Grill is an adult's only restaurant located adjacent to the beach. Grilled meats, fresh seafood and wines by the carafe are daily favourites at this casual venue overlooking the resort’s Jetty and Caribbean Sea.
Beach & Jetty Dining Many guests at Carlisle Bay want to dine on the beach. The resort can set up private barbecues for celebrations, or just a table for two on the sand. Let the resort know what you want and they will do their utmost to fulfil your requirements, allowing you to make the most of a quiet location while enjoying private waiter service and the best of our resort's varied cuisine.
Bars & Lounges
Pavilion Bar occupies an elegant, open-sided Caribbean pavilion with traditional wooden shutters that open up to let the scents of sea and rainforest fill the air. With deep sofas, soft lighting and quiet corners for an intimate drink, this is a popular place for meeting for a cocktail before dining at East, which is located in an adjacent room, or sipping a thirst-quenching fruit punch while the sun is high in the sky.
Indigo Bar at Carlisle Bay is an open-sided bar beside the beach with simple rattan chairs and sofas where guests gather at any hour for cocktails, fruit punches and drinks.
The Coconut Grove located next door to Indigo Bar, is a pretty swathe of shaded sand behind the main beach where chairs and loungers offer couples a quiet place to hang out with a drink. The bar service here is available at any hour, and includes a pleasant afternoon tea provided to guests on a complimentary basis.
Jetty Bar is a fun, foot-in-the-sand bar where guests can catch a drink when coming in from the sea. Fresh coconuts and beers feature, along with light bites and sundowners served around the fire pit (made from an old 'copper', which was originally used to boil cane juice).
Sports & adventure
Non-motorised water sports are comprehensive and complimentary with a team of expert staff. Activities include sailing, kayaking in the mangrove, snorkelling, windsurfing and paddle boarding.
Motorised water sports such as waterskiing, wake boarding and tubing take place in a neighbouring cove in order to preserve the tranquility of Carlisle Bay for all of the resort's guests. Note these sports are chargeable.
Yachting & Sailing Caribbean yachting holidays are among Antigua's main draws. At Carlisle Bay, guests can now learn to sail or improve their skills aboard a 40ft keelboat, on three day Royal Yachting Association courses which can be arranged with the resort. Indeed boat charters are a popular way to explore Antigua’s 365 beaches, coves and historic harbours on sunset cruises, half-day picnic charters, picnic excursions and all-day cruises to the likes of Great Bird Island, which has some of the best hiking and snorkelling to be found.
Tennis - Almost unique among Caribbean hotels, we have nine well-maintained tennis courts, including four which are floodlit for cooler, night-time play and one for children to shoot some basketball hoops. Rackets and balls are provided on a complimentary basis. Professional instruction is also available for all levels, as are group and one-on-one lessons. Carlisle Bay also run complimentary clinics in their weekly activities program.
